It just so happened that I landed in Vegas this past Tuesday, October 4th, and decided to take a walk past the soon to open Gordon Ramsay Fish and Chips at LINQ Promenade. As I walked by it appeared there was actually an employee training session going on and there was a little sign out front indicating they would open at 12:30 for lunch. I thought it must be fate as I was in Vegas when Ramsay’s fried fish restaurant was opening.

I spend a lot of free time fishing, both competing in tournaments and also just for fun. I happened to live about an hour from Port Clinton, Ohio which is known as the Walleye Capital of the World. Because of this, I always have a good supply of fish in the freezer and have learned many different ways to fry up a few fillets.

Ramsay’s new place is a take-out style venue. It was still under construction (as this was a soft opening) when I visited as crews were busy hanging TVs. While the line was long (out the front door), it moved rather quickly, and there was plenty of action watching the kitchen crew. Although it may have looked like a bit of mass chaos, the kitchen staff was well organized, each having a specific task. Two guys managed the fryers for french fries, a.k.a chips. There were another two employees who dipped the fish fillets in batter with two more manning the fryers. Finally, there were a two more crew members assembling the orders.

I ordered the basic fish and chips combo which included a drink for $14.99. It also included two sauces for dipping. I went with the tartar sauce and southwest ranch. The fish itself reminded me of beer batter fried perch from back home. It was a thicker batter, but truly delicious. One of the tricks with frying fish is to make sure it rests when you pull it out of the fryer. However, when it’s resting, you don’t want to set it on just basic paper towels because you will end up with a soggy side. Ramsay had a large area in the assembly line for the fillets to rest when they were done in the fryer and executed this perfectly. The fillets were crispy and fell apart easily when biting off a piece. Also, the tartar sauce was fantastic.

The only problem was the lack of seating. Now it appeared to me there was more seating under construction which will hopefully improve things. The quality of the food, however, is worth a trip for sure.
